Anise Hyssop Agastache foeniculum (Perennial) Medicinal. Anise scented leaves have purple flower spikes that attract hummingbirds. Native Americans made tea with this herb to use as a cough medicine. The leaves and stems are used to treat fever, wounds, diarrhea and angina. 4'

Basil Ocimum Basilicum (Annual) Culinary and Medicinal. Warm spicy tasting leaves on square stems. The leaves are used in many different cusines. They also repel mosquitoes, expel worms, treat ringworm, snakebite, insect bites and acne. Basil is a Hindu's passport to paradise. Basil is native to India, and was held in great reverence. Indians used basil to swear their oaths upon in court. In Italy, basil symbolises love. In Mexico it is carried around in the hope of returning a lover’s roving eye.

Burnet Sanguisorba minor (Perennial) Virtually evergreen, pleasant cucumber flavor for soups and salads. Known for slowing blood flow. American Revolutionary soldiers drank burnet tea before battles.18"

Calendula
Calendula officinalis (Annual) Culinary and Medicinal. Edible yellow flowers petals are used in salad. They thrive in cool weather taking light frost well. Infuse flower petals in a carrier oil to use on mature skin and other skin related problems. 1'

Catnip Nepeta cataria (Perennial) Medicinal. Rough mint-like leaf with a strong, pungent scent. Leaves make a relaxing tea, good for coughs and colds. Cats love the aroma and taste. Chew root to build courage.2'

Chamomile, Roman Chamaemelum nobile (Perennial) Medicinal. Apple scented leaves with white daisy-like flowers. Good ground cover. Anti-inflammatory, analgesic and disinfectant properties. An infusion tea made from the flowers and leaves is an excellent sedative. 6-12"

Chervil Anthriscus cerefolium (Annual) Culinary and Medicinal. Classic French cooking herb, praised for its delicate parsley like flavor with a hirt of Myrrh. Good in salads, soups and sauces. Grows best in cool weather, tolerates shade. Said to be a Spring tonic and a cure for hiccoughs. 1' - 2'

Chives Allium schoenoprasum (Perennial) Culinary and Medicinal. Narrow leaves with edible lavender flower heads. Use in salads, cheese and egg dishes, gravies and soups for a mild onion flavor. Chives are mildly laxative and aids digestion. Said to be an antidote for poison and a remedy for bleeding. Romanian Gypsies have used chives in fortune telling. It was believed that bunches of dried chives hung around a house would ward off disease and evil.1'

Staro Allium schoenoprasum
Heavier leaf onion chive. Whether the destination is freezing, drying, or fresh use, Staro is a great choice for markets that require a much thicker leaf than the finer leaf choices.

Cilantro Coriandrum sativum (Annual) Culinary. The leaves are pungently aromatic and are used extensively in Southwestern, Middle Eastern and Asian cooking. The seeds are called Coriander and are a popular spice. 2'. It was highly regarded as an aphrodisiac from the times of the early Greek, Roman and Egyptian civilisations to the Middle Ages when it was an ingredient of love potions.

Curry, Dwarf Helichrysum angustifolium (Tender Perennial) Silvery foliage with small yellow flowers that have a wonderful curry scent. 1'

Dill, Bouquet Anethum graveolens (Annual) Culinary and Medicinal. Dark green feathery foliage with summer flowers followed by heads of oval seeds. Dill is used in pickling and vinegars. The seeds also aid digestion. Prevents obesity and thwarts witches. 3'

Herucles Dill Anethum graveolens 'herucles' - Tall, extremely productive plant with high yields of fresh dill leaves. Very uniform. Later to flower than Bouquet.

Eucalyptus Eucalyptus cineraria (Tender Perennial) Medicinal. Very aromatic with silvery/gray round leaves. It exudes a sticky resin. The essential oil is antiseptic, expectorant and antiviral. Generally used in flower arrangements. 20'

Fennel, Bronze Foeniculum vulgar, var. (Perennial) Culinary and Medicinal. The bronze foliage is feathery like that of Dill, with an anise flavor, especially the seeds. Use leaves in fish, pork, veal. Use seeds in breads, cakes and sweet pickles. Fennel seed tea is detoxifying and diuretic. A favorite food of the Swallowtail Butterfly larvae. 3-4'. In Medieval times, fennel was hung from the rafters to bring good luck, and put in keyholes to keep out ghosts and evil spirits

Germander Teucrium (Perennial) Medicinal. Small bushy plant grows from 1'-2'. Aromatic foliage and pink flowers make this an essential element in a Knot Garden design. Nice for rock gardens or borders. Makes a wonderful low evergreen hedge. Easy to keep at 12". Popular stewing herb for coughs, gout and other pains.

Lavender (Perennial) There are 28 species of lavender, all with linear leaves and spikes of flowers ranging from blue to white. Lavender is used for cooking as well as for its medicinal properties. The flowers are used to flavor jams, stews, pastries, creams and vinegars. Dried flowers are used in sachets and potpourris. The flower water is an antiseptic that treats acne and a skin toner for speeding cell renewal. Flower tea treats anxiety, headaches, nausea and dizziness. The essential oil is highly valued as perfume and is also antiseptic, mildly sedative and pain killing. It will relieve the itching of insect bites and the pain of burns, headaches and sore throats. Adding the oil to bath water is very relaxing and induces sleep. The herb of fidelity. Traditionally used to revive people from faints or swoons.

Lemon Balm Melissa officinalis (Perennial) Culinary. Pleasent lemon flavor and fragrence makes it pleasant in tea, punches and in fruit salad. Good for potpourri. Known in European history as the "Elixor of Life." It is believed to renew youth and add longevity. Said to dispel melancholy. 1'

Lemon Grass Cymbopogan flexuosus (Tender Perennial) Culinary. Clumping grasslike plant, with a strong lemon scent. Use stalks in Asian cooking. 10"

Lovage Levisticum officinale (Perennial) Culinary and Medicinal. Dark green leaves that are strongly scented of celery. The leaves are used in soups and stews. A tea made of the seeds, leaves and roots is detoxifying, slimming and reduces water retention. 4'

Marjoram (Tender Perennial) Culinary and Medicinal. Aromatic,The ancients believed that if marjoram grew on a grave it was a sign of the happiness of the departed spirit. Sometimes it was planted at gravesites to comfort the departed and ensure their eternal peace and happiness. In the Middle Ages, bridal couples wore wreaths of marjoram to symbolise love, honour and happiness.
Golden Origanum majorama 'Aurea' (Tender Perennial) Culinary and Medicinal. Aromatic, hairy leaves with white to mauve flowers. It is a popular herb used in salads, sauces, cheeses, and liquors and as part of "Herbs de Provence". As a tea, it aids digestion, relieves colds and headaches and soothes the nerves. 2'
Hardy Sweet O. majorama (Tender Perennial) Culinary. Aromatic sweet scent with pretty knot-like flowers. Use in dressings, salads, pasta, beans, fish, lamb or eggs. Symbolizes honor.

Myrtle (Tender Perennial) Medicinal. In Greek legends, Myrrha was the favorite of the priestess Venus. Aromatic and can be used as an anticeptic.

Mints Mentha (Perennial) All mints are perennial and are used for both cooking and medicinally. They are easily hybridized and are invasive if the plant is not contained. Mint flavors drinks, candy, cigarettes, toothpaste and medicine. Mint aids digestion and treats stomach complaints. Peppermint in particular has additional antiseptic, antiviral and sweat inducing properties. Old herbalists recommended it for bites of dogs. Mint has long been regarded as a symbol of hospitality, the Romans would strew it around at feasts and banquets as a welcoming sign to guest. Legend has it that Pluto’s wife Proserpina cast a spell on a lovely young lady who had turned Pluto’s eye and turned her into a mint plant.
Apple Mentha suaveolens (Perennial) Culinary and OrnamentalThis plant is attractive to bees, butterflies and/or birds. Flowers are fragrant.An attractive herb, Apple mint is often used as an ornamental plant. It is hardy and easy to grow, preferring full-sun to lightly-shady conditions. The leaves of this plant can be used to make Apple mint jelly, as well as a flavoring in dishes such as Apple mint couscous. It is also often used to make a mint tea, as a garnish, or in salads.

Corsican Mint Mentha requienii - This Creeping perennial mint only grows to 1⁄2-inch. Tiny, light purple flowers on small, round, 1⁄4-inch wide, bright green leaves. Makes a great groundcover.
Kentucky Colonel Spearmint Mentha spicata var. Delicious spearmint flavor. Large leaves, great for Mint Juleps and Iced Tea. 2'

Orange Mentha x peperita var. Good for tea, has an orange-citrus flavor. 2'
Peppermint Mentha peperita var. Small pointed dark green leaves with a strong peppermint flavor. 1'
Pineapple Mentha suaveolens Variegata Pineapple-mint scented with variegated leaves. 1'

Nasturtium The dwarf, bushy nasturtiums add rainbows of cheerful color in annual beds and borders. Use the trailing forms on low fences or trellises, on a gravelly or sandy slope, or in a hanging container. Many gardeners include nasturtiums in the salad garden. Edible flowers and foliage are a gourmet treat. They taste peppery like watercress. Nasturtiums deter whiteflies and squash bugs.
Alaska Tropaeolum - majus (Annual) - The variegated foliage and striking flower colors of 'Alaska' make an eye-catching edging, border, container or hanging basket planting. Blooms spring to fall frost. 12" tall, flowers in shades of yellow, mahogany, cream, and orange with light green marbled foliage.
Mahogany Tropaeolum - majus (Annual) - Majestic deep red 2"- 2 1/2" flowers are a stunning contrast against the bright-green foliage. Mahogany's rich color is reminiscent of gleaming antique furniture. Adds 'polish' to edging, borders, containers, or hanging baskets!
Oregano Origanum vulgare (Perennial) Culinary and Medicinal. Oregano is a woody perennial with pungent dark green leaves. It is used in Italian and Mediterranean cooking and Mexican chili powders. Use in tomato sauce, fish, salad dressings, pizza. A tea made from the leaves soothes coughs, muscle spasms and headaches. The word oregano means “joy of the mountain” from the Greek oros, meaning mountain and ganos meaning joy.

Italian Origanum x majoricum (Tender Perennial) - This variety is a cross of oregano and margoram and will grow to 2'. Strong flavor and fragrance. Used in Italian tomato sauces, salad dressings, and soups. Uses: Culinary, Fragrant
Kent Beauty Origanum rotundifolium Beautiful, trailing oregano that works well in hanging baskets. Light lavender/pink bracts with lavender flowers that dry well. 6"
Sicilian Origanum x majorana Spicy, sweet aroma, grows upright with small white flowers. 18"

Parsley Petroselinium crispum (Biennial) Culinary and Medicinal. Parsley is an all time favorite herb used for seasoning and garnishes in almost all types of cuisines. The fresh leaves are a rich source of Manganese, Chlorophyll, Vitamins and Calcium. The leaves, roots and seeds are diuretic, reduce the release of histamines and scavenge skin aging free radicals. Grown near roses, parsley improves their health and scent. Worn in garlands to protect from drunkeness. The Ancient Greeks crowned winners of sporting events with wreaths of parsley. One rumour had it that you could bring about the demise of an enemy by plucking a sprig of parsley while speaking his name. In the Hebrew celebration of the Passover, parsley is used as a symbol of rebirth.

Patchouli Pogostemon cablin (Tender Perennial) - Medicinal and Perfumery- Tall upright growing herb with very aromatic leaves that deter insects when placed among clothing. The whole plant is antiseptic, an insect repellent, an antidepressant, a stimulant and is used as a remedy for venomous snake and insect bites in Southeast Asia. The essential oil is used in aromatherapy to regenerate skin cells, treat acne, eczema, athlete's foot and cracked skin. 3"

Pennyroyal Mentha pulegium (Perennial) Medicinal. This member of the mint family has very strongly scented leaves that repel fleas and ants. It should be avoided during pregnancy because of its abortifacient properties. This variety is a creeper. 1'

Rosemary Rosmarinum officinalus (Tender Perennial) All Rosemaries are tender perennials. Culinary and Medicinal. It is an ancient, savory herb, especially popular in Italian dishes. Rosemary has dense, aromatic, needle-like leaves with woody stems. The leaves are antiseptic, anti-oxidant and aid in the digestion of fat. The essential oil is antibacterial, antifungal and invigorating. It relieves muscular pain and stimulates circulation. The herb of memory, said to quicken the mind and prevent forgetfulness. Rosemary was burnt at shrines in Ancient Greece to drive away evil spirits and illnesses.

Hill Hardy Rosmarinum officinalus 'Hill Hardy' Also known as Madeline Hill. a strong, hardy variety. 4'

Mrs. Howard's Creeping Rosmarinum officinalus 'Mrs. Howard's Creeping' Great for training on topiaries, a vigorous grower. 1'

Salem Rosmarinum officinalus 'Salem' Upright rosemary, cold tolerant. 2'
Severn Sea Rosmarinum 'Severn Sea' - especially fine rosemary cultivar for containers or over walls, with a spreading and arching habit. Violet-blue flowers. Widely used in Italian cuisine. 3'.
Spice Island Rosmarinum officinalus 'Spice Island' - Pungent flavored variety, wonderful for cooking or as an ideal plant for topiaries. 'Spice Island' is perfect for pots. Use with meats, potatoes, and herbed breads 24-30".
Tuscan Blue Rosmarinum officinalus 'Tuscan Blue' - 'Tuscan Blue' is a tall-growing upright rosemary. Used for hedges to border small fields in Tuscany, 'Tuscan Blue' is a handsome plant with exceptionally dark blue flower spikes and highly aromatic pale green leaves that lend themselves to cooking and drying. Along with the other tall rosemaries, it is more suitable for growing in warmer climates, but it can also be grown in short-season regions.

Rue Ruta graveolens (Perennial) Medicinal. An evergreen subshrub with yellow summer flowers. The leaves are aromatic and rich in Iron and other minerals. It has been used to treat high blood pressure, epilepsy and colic. Rue is an abortifacient and should be avoided during pregnancy. Arrows and flints dipped in rue juice were thought never to miss target. 2'

Sages Salvia Medicinal and culinary. All sages are members of the Salvia family. They are mostly known for their culinary uses. Used with poultry, pork, sausage, in dressings, pickles and cheese. Some are considered to be strictly medicinal. Others are grown to attract hummingbirds and bees. Prevents the onslaught of old age, memory enhancement, reducing hot flashes in menopause and boosting natural estrogen production, as well as reducing breast milk when weaning a baby. To the ancients, sage symbolised wisdom, skill, esteem, long life, good health, domestic virtue, mitigation of grief, and increased psychic powers.
Common Salvia officinalus (Perennial ) Medicinal and culinary. Woody square stems with hairy leaves and blue flowers. The leaves have a strong taste that increases as it dries. 18"
Berggarten Salvia officinalus 'Berggarten' (Perennial) - Culinary- Large round gray/green leaves with a very spicy scent. 10"
Clary Salvia scleria (Biennial) - Medicinal- Large pungent leaves with tall flower spikes. The essential is used in Aromatherapy as a relaxant for stress, fatigue, asthma, digestive and female problems. 3'

Pineapple Salvia elegans (Tender Perennial) Culinary and Medicinal. Smells just like fresh pineapple. Bright scarlet flowers in the fall. Used as a flavoring on pork, poultry, fish and cheese. 3'
Honeydew Salvia elegans, Var. (Tender Perennial) Culinary and Medicinal. Honey-dew scented, heart shaped leaves with tubular red flowers. 3'
Purple Salvia officinalus 'Purpurea' (Tender Perennial) Short compact Sage with purple/red leaves. 18'
Scarlet Salvia coccinea (Annual) Ornamental. Beautiful red flowers that attract hummingbirds and bees. 3'
Tri-color Salvia officinalus 'Tri-Color' (Perennial) Culinary.

Santolina Santolina ericoides (Tender Perennial) Medicinal. Santolina is also known as Lavender Cotton. The feathery foliage smells like the medicine "Champho-Phenic." The flowers are either cream colored or yellow and appear in late summer. Santolina is traditionally used in English Knot Gardens. It is a medieval remedy for killing intestinal worms, cleansing the kidneys and jaundice. 1'

Savory Culinary and Medicinal. According to lore, the satyrs lived in meadows of savory, thus implying that it was the herb that made them passionate. This belief persisted over the years, and even as recently as this century noted French herbalist Messeque claimed savory was an essential ingredient in love potions he would make for couples. As a boy his father told him it was "the herb of happiness."
Savory, Summer Satureja hortensis (Annual) Culinary and Medicinal. The strongly aromatic leaves bring out the flavor in all bean dishes. They have a spicy, peppery taste. Medicinally, Savory is an antiseptic and an astringent. Bees love it. Known as the bean herb. Favored by satyrs and demigods of he woods and fields. 1'
Savory, Winter Satureja montana (Perennial) Culinary and Medicinal. Winter Savory is a creeper that forms a dense mat of bright green leaves. Its culinary uses are the same as Summer Savory. Crushed Winter Savory leaves relieve the pain of bee stings. 15"

It has a bittersweet peppery taste with anise undertones. Leaves are good in salads, egg and cheese dishes and vinegar. Tarragon tea stimulates the appetite, aids digestion and is a general tonic. Thyme Thymus vulgaris Culinary and Medicinal. Thyme is either a shrubby herb with woody stems or a creeping ground cover. It has small leaves that are strongly aromatic. It's an ideal flavoring for soups and stews. Thyme aids in the digestion of fatty foods. The essential oil is an antiseptic and a nervine. Gentlemen who smell of thyme are identified as having virtue, style, grace and elegance. Sprigs of thyme were placed on coffins of the dead. It was thought that the spirit would then take up residence in the flowers of thyme plants.

Elfin Green Thymus serpyllum 'Elfin' - This dainty plant is a low spreading form of thyme that stays under two inches tall. The tiny, ovoid leaves form a thick carpet. Elfin Thyme has a fresh flavor with a hint of lemon, but because of its size it is not practical to use in cooking. It is best when grown in containers or for a groundcover.
